Chicken Noodle Soup with Homemade Noodles

I am always surprised when I give people the option of picking any meal they could possibly imagine and they choose my Chicken Noodle Soup! I mean I get the entire meal is comfort food at its finest but it just seems like such a basic recipe! However, every time someone asks for it, it makes me realize that it is truly the simple things in life that can bring us the most joy! This is the perfect recipe to bring a sick friend or someone who has just had a baby or surgery. It is easy to multiply so there is plenty to share and it tastes even better the second day so it’s easy to make it in advance! You can also assemble it and put it in the crockpot on low for quick weeknight dinner
I definitely think the thing that makes this recipe so special is the homemade noodles. While this may seem very daunting task, if you have a Kitchen Aid Mixer, it is truly a cinch! Taking the time to make the noodles from scratch, elevates this entire meal so do not be intimidated! You will need to have a pasta roller and/or cutter to make this as easy as possible. This Kitchen Aid attachment setis the one I have and love. I simply use the Fettuccine Cutter. However, if you do not have a pasta cutter, you can use a rolling pin and pizza cutter as I did for many years! I will teach you how to do both methods!
Classic Chicken Noodle Soup with Homemade Noodles
4 C Flour
2 Whole Eggs, 6 Egg Yolks
4 tsp salt
1/2-2/3 C Water
2 Tbsp Butter
2 Tbsp Olive Oil
1 Diced Onion
3 C Chopped Carrots
4 Cloves of Garlic
1 -2 Lb Chopped Chicken
8 C. Water
4 TBSP Knorr Chicken Bouillon, or to taste (Side note- you can buy a huge container from Costcofor $ 14.99. If I have homemade chicken broth on hand I will use that instead)
1. Combine flour, eggs, egg yolks and salt in Kitchen Aid Mixer Bowl. Mix with paddle attachment until combined.
2. With mixer on medium-low speed, add in water, one tablespoon at a time only until the mixture forms a ball. Dough will be on the dry side but that is what we want!
3. Replace paddle attachment with dough hook attachment. Depending on the power of your mixer, I usually pull my dough in half and knead half at a time so my mixer isn’t overworked. Turn mixer onto medium speed and knead each half of dough for approx. 10 minutes, until smooth and elastic.
4. Divide the dough into 8-10 equal sections and cover with a towel. Let rest for 5 minutes while you prep to cut.
5. Attach Fettuccine Cutter to your Kitchen Aid Machine. I have a Noodle Drying Rack I set up, but you can also lightly flour your counter top and just lay the noodles out.
6. Flatten each ball with your hand. I usually roll my rolling pin over it, especially on the edge to make it thin.
7. Feed each ball through your Fettuccine Cutter, making sure to catch the noodles with your hand as they come out so they don’t stick to each other. Place them on your Noodle Drying Rack or lay them carefully on your lightly floured countertop.
(If you do not have a pasta cutter, simply roll each ball out with a rolling pin on a lightly floured counter top to whatever thickness you like your noodles. Use a pizza cutter or knife to cut into long strips, approx 1/4″ wide. You can cook these fresh or allow to dry for 2-3 hours and store for later use.
1. Heat butter and olive oil over med-high heat in a large soup pan
2. Add chopped onion and stir to coat, reduce heat to medium
3. After approx. 4-5 minutes, add chopped carrots.
4. Reduce heat to medium low and use garlic press to add garlic
5. Add chopped chicken*
6. Add water and bouillon-turn heat to High and bring to boil
7. Once boiling, add noodles. What you do next depends on what you are doing with them. If you are serving immediately, reduce heat to medium and let cook for approx 12-13minutes then serve. If you want it for later, you can put it in the crockpot on low for up to 8 hours. If you want to freeze this meal, freeze it before you add your noodles!
*Chicken- You can use shredded rotisserie chicken or what I did last night was: preheat your oven to 450*, take 3 chicken breasts and coat them with olive oil then sprinkle with salt, garlic powder and paprika. Place in preheated oven for approx 15 minutes. Remove and place in Kitchen Aid Bowl with Paddle Attachment. Stir on med-low speed until shredded)
